Sword Fish Sicilian Style
Had this special treat in Cefalu on Christmas Eve one year with Malcolm’s mother. Cefalu is a very tiny fishing village outside of Palermo. This is a typical Sicilian dish and the fish is so moist if you do not overcook.
“Sword Fish Sicilian Style”
Ingredients
4 Each 1 1/2 to 2 inch thick Sword Fish Steaks
1 onion chopped
2 stalks of celery chopped
2 cloves of garlic chopped
1/4 cup of currants
2 tablespoons of capers chopped
1/2 cup of green olives chopped
2 small boxes of cherry tomatoes
Bondolio Olive Oil
Directions:
Preheat a heavy pan with olive oil. Coat the fish in salt and flour and brown the fish on both sides and remove from the pan. Add more olive oil of necessary then add the onions, garlic and celery and cook until the onions turn a bit translucent. Add the tomatoes, capers, currants, and olives and cook a short time until the tomatoes short cooking. Add, the fish back into the pan and put in the oven at 350 degrees for 10 minutes. Do not over cook as sword fish will get very dry.
