ORDER NOW – 2004 HARVEST
During harvest time at Bondolio and in Southern Italy, these beautiful olives are beginning to change from their brightly colored green to a softer, less flashy shade. We harvest by hand when the olives are just right and they go from tree to bottle in less than 90 minutes.
Because the “new oil” has yet to settle down, the taste profile is fruity, buttery, and delightfully green on the palate.
