Karen’s Jacket Potatoes
Bondolio’s Inexpensive Recipe of the Day: Jacket Potatoes
You can put anything you want on the jacket potatoes, but this is our recipe of the day. It’s very filling.
Recipe for 4:
Ingredients:
4 large Russet potatoes
1lb of ground turkey or chicken
1 yellow or green onion chopped
2 carrots, chopped
1 pack of shredded cheddar cheese
1 avocado
Bondolio Extra Virgin Olive Oil
Pinch of sea salt
Directions:
Put baked potatoes in the oven for an hour and a half. After 15 minutes, poke holes along the top with a fork and put back into the oven.
Half hour before the potatoes are done add extra virgin olive oil to dutch oven or saucepan, enough oil to sauté the onions and carrots. Cook until the onions are transparent. Then add the ground turkey and break into pieces and cook until browned.
When potatoes are ready, cut the centers in a cross and open the “jacket.” Pour a generous portion of extra virgin olive oil. Take a fork and mash the potatoes and olive oil. Then, add salt, then add more olive oil and mix up the potato. Equally divide the ground turkey mixture with the four potatoes and pout over each potato. Sprinkle a generous portion of cheese over the top. If you’d like the cheese melted, put in the microwave for 30 seconds to a minute.
Top each with a sliced quarter avocado and enjoy!
